If you use a cheesecloth or coffee filter, make sure it's wet before adding the mushroom mixture. Place the filter over a bowl or jar, pour in the mushroom mixture, and use a spoon to squeeze out as much liquid as possible.To get the most out of the mushrooms, heat up another 40ml (⅙ cup) of water and pour it over the mushroom paste. Once you've strained out all the liquid, pour the extract into a pot or saucepan. Don't turn on the stove yet. Once fully dissolved, remove it from the heat and move on to the next step.For agar, also heat on medium heat. Fortunately, agar is more heat tolerant than gelatine. Keep stirring while it heats up. Wait until bubbles form on the surface, which indicates the agar has activated and is ready to set. After bubbles have been present for about 1 minute, turn off the heat and proceed to the next step. -

Move quickly now so the mixture doesn't start to set before it's in your molds, as the cooler it gets, the harder it becomes to work with.
